Mission: Cooking for Seven Today

We have a really small family in Chicagoland.  My husband, myself and two kids, plus my Mom and brother.  Cooking dinner, even for holidays is not usually a big deal.  However, my Mother-In-Law is coming for Christmas – all the way from Connecticut! Cool, one more person…not a big deal in the kitchen….but…..   My Sister-In-Law from Florida and her boyfriend are in town too!  I haven’t cook for seven people in ages!

Well, maybe I’ve cooked for 7, but snack time at a playdate doesn’t count.  The hardest part of preparing this menu is that I don’t know their likes/dislikes and I’m sure organic/healthy is not high on their priority list.  So I right after I finish here at Mission: Clean Kids this morning I will be googling up a meal to make tonight, plus making the Christmas dinner list.  I see a lot of time in the kitchen!

So far, I know I’m making something with Chicken.  I’ll get the all-natural, no-antibiotic chicken, which is half the price of organic chicken.  I’m also thinking a broccoli/veggie casserole & mashed potatoes – who doesn’t love mashed potatoes!  Dessert: Organic Magic Cookie Bars and an Organic Christmas Cake.

Still feels like I’m missing something.  Anybody have any ideas?  Maybe a fruit salad? A green salad?
